The most beautiful looking cakes are always the hardest to make, right? Yes, well pretty much. The good news is that you can whip up the easiest cake for dessert or a quick moms & kiddies get together or even your child’s party (because really, they just want the sugar)… and this is my secret.
You. Don’t. Have. To. Bake.
Seriously.

Get yourself down to your local supermarket and buy fresh cake sponge already baked and sealed for your enjoyment. You can get two for a double layer cake (what I did), or go wild and get four and make a tall cake that can be iced or left naked.
Next up: caramel treat, whipping cream, icing sugar, vanilla extract and 100s & 1000s.
Simply spread the caramel thickly on the base of the sponge cake (and on the bottom side of the top piece). Repeat with layers 3 and 4 if you’re going for a tall cake.

Whip your cream with the icing sugar and vanilla extract (here’s an easy recipe for Chantilly Cream) and spread liberally over the caramel. YUM. You may lick the spoon at will.


Once you’ve completed your layers simply shake the 100s & 1000s (or silver balls or chocolate sprinkles) onto the cake and pop them into the fridge to ensure the cream doesn’t melt. Make sure to take out of the fridge with enough time to get to room temperature for your party.
